Ingredients

Vegan Shrimp Rolls
Before getting started, slice your carrots, lettuce, green peppers, basil & mint to your desired size. Set aside until later.
Bring a pot of water to boil. Once boiling, add the All Vegetarian Shrimp to pot for approximately 30 seconds. Remove from heat & strain with a slotted spoon. Set aside to cool.
After the shrimp is removed from the boiling water, add your rice noodles and boil from 2-3 mintutes or until soft. Remove from heat, strain & set aside.
To assemble the shrimp rolls, clear a workspace or countertop. Add some warm water to a pan large and deep enough to submerge the rice paper.
Once your workspace is set up, submerge the rice paper underwater for about 15 seconds - or until soft. Remove from water and lay flat on your workspace.
Add your shrimp to the first layer along with your mint and basil. Then layer in your lettuce, peppers and carrots.
Once properly layered, roll your shrimp rolls! We like to use the method pictured in this chart.
Vegan Satay Sauce
Create your sauce to match your flavor preferences. We recommend slowly adding soy sauce to a peanut butter, garlic and chili powder mixture until it meets your flavor profile. Try adding some water to thin if it's too thick!
