Northern Laos-Inspired Lemongrass Skewers
These authentic, Northern Laos-Inspired Vegan Lemongrass Skewers are made with Impossible Meat and are 100% vegan!
24 oz. Impossible grounds
3/4 cup fresh shallots, finely diced
1 cup Fried Shallots
2 tbs Lemongrass Turmeric Paste(optional)
3 tbs. lemongrass (outer layers removed, and ends trimmed)
2 tbs fresh ginger
3 tbs raw garlic
1.5 tbs fresh cilantro
1.5 tbs fresh dill
1/4 cup Mushroom “Oyster” Sauce
2 tbs Low Sodium Soy Sauce
2 tsp Vegan Fish Sauce
2 tsp white pepper
2-3 tsp chili flakes (or to heat preference)
1/2 cup Bread Crumbs
Place the Impossible grounds and diced shallots into a large mixing bowl.
Meanwhile, add all ingredients into a food processor. Pulse until pieces are well incorporated and the lemongrass, garlic and ginger is broken down.
Transfer the contents into the large mixing bowl then mix together until evenly distributed. Portion and gently roll into logs then run a skewer through each piece. Carefully pinch the mixture into the skewer to help bind it. (I like to use an ice cream scooper to evenly portion before rolling out, but not necessary!)
Heat a grill pan to medium-high heat then lightly coat with cooking spray.
Cook each piece for about 3 minutes, flipping halfway through until grill marks appear and it is cooked thoroughly.
Finally, enjoy by itself or pair with vegetables, noodles, rice or a combination!
