Ingredients

24 oz. Impossible beef grounds

1/4 cup GF Bread crumbs

1 small red onion, roughly cubed

3 tbs raw garlic
-
2 tsp dried rosemary
-
1 tbs dried oregano
-
2 tsp ground coriander
-
1.5 tbs ground cumin
-
1 tbs garlic powder
-
2 tsp dried thyme
-
2 tsp sweet paprika
-
1 tsp black pepper
-
1 tsp sea salt
-
2 tbs olive oil
-
1 large cucumber
-
2 tsp sea salt
-
1 small lemon
-
2 cups vegan greek yogurt
-
1 cup vegan cream cheese (this helps add thickness and add creaminess)

3 cloves raw garlic
-
3 tbs fresh dill
-
1 tsp fresh mint leaves
-
2 tbs extra virgin olive oil

1 tbs red wine vinegar
-
Greek flatbread (or pocketless pita bread)

Freshly chopped lettuce

In a food processor, add all ingredients and process until broken down and combined. (The “beef” is designed to crumble so the bread crumbs and blending will help make it sliceable for the sandwiches.)
Transfer the mixture to the fridge to chill for 30 minutes to help solidify (which will make it easier to shape.)
Portion (I like to use an ice-cream scooper) and pinch onto skewers. Place onto a tray and repeat. Transfer to the fridge to chill for another 30 minutes to help solidify the pieces again.
When ready, preheat a grill pan to medium-high heat and cook for 5-9 minutes, flipping halfway through, or until browned and thoroughly cooked.
Tzatziki Sauce
In a food processor, break the cucumber into pieces and add the sea salt.
Process until broken into smaller bits (alternatively you can use a grater.)
Next, use a cheese cloth or strainer and transfer the cucumber mixture and allow the juices to strain as the salt draws out the moisture (let sit for about 15 minutes before squeezing the remainder.)
Afterwards, transfer the strained cucumbers back to the food processor, squeeze the lemon juices on top, then add the remaining ingredients.
Blend until all is evenly combined and broken down to reveal a delicious sauce.
Transfer into airtight containers and allow to marinate and chill in the fridge overnight before using.
Assembly
Layer the Tzatziki sauce onto the flatbread then add the skewers or slices of souvlaki “grilled meat” on top.
Next, add on the remaining ingredients to preference.
Finally, dig in and ENJOY!
