Mushroom & Spinach Quiche

This Vegan Quiche is packed with Spinach, Mushroom, Tempeh and is simply divine.

Ingredients

4 tbsp ForA:Butter
-
3 cloves garlic minced
-
1 medium yellow onion
-
3 cups spinach
-
8 oz diced mushrooms
-
1/2 C vegan Parmesan
-
1 C vegan cheese grated
-
4 Cups JUST egg vegan egg substitute
-
1/2 tsp sea salt
-
1/2 tsp black pepper freshly ground
-
1 tsp Black salt
-
8oz Tofurky Tempeh
Directions
Preheat oven to 375º
Melt butter to pan. Add your sliced mushrooms, onion, garlic, and spinach and cook down.
On a separate pan, add thinly sliced tempeh and cook to desired crisp. Crumble after.
In a baking dish, add coat with remaining butter. Add your JUST Egg and combine with sauteed veggies and crumbled tempeh. Mix in vegan cheeeses.
Cover the quiche and bake for 20 minutes.
After 20 minutes, remove quiche and sprinkle remaining cheese. Uncover and bake for an additional 20.
Remove quiche from oven and let cool for about an hour (to set).
